Since I have mentioned my dislike of risotto, I thought I should highlight this dinner. Oh my goodness, it was delicious! I like THIS risotto with chorizo and tomato from March 14th. Adding the broth about a cup at a time worked just fine.

MONDAY

Potato Soup
This time, I’m leaving the skins on to balance out the carbs. Hopefully, the immersion blender will make quick work of them!
No recipe for this one. Boil some potatoes, diced onion and diced celery, salt and pepper and a pat of butter. Once it is all soft, blend it, then add some evaporated milk to give it some creaminess. Add more vegetables if you like it thicker. Play with it. This is a hard recipe to mess up.

Bavarian Bratwurst and Fake Sauerkraut
I’ve got a package of these sausages from Trader Joe’s. Honestly, they look more like a weisswurst, but they say bratwurst.
I’m going to pan-fry fresh cabbage slaw with diced onion, mustard, cider vinegar, salt, and black pepper.
WEDNESDAY

-Scrambled Eggs
-Peaches & Raspberries
I’ve got both whole frozen Palisade peaches and homegrown raspberries in the freezer. They both need eaten!
-I will scramble the eggs with cream cheese as I accidentally bought too much.
-For the fruit, when the peaches are semi-thawed, remove the skins and slice. Mix in semi-thawed raspberries. I will serve this in a small bowl on the side, so it doesn’t bleed into the eggs once plated.

Vegetarian Ramen
At Trader Joe’s, I bought a bottle of furikake seasoning. I might be the only one that uses it, but that is okay.
For the broth:
-Chicken broth
-Miso paste or packets
-Diced garlic
-Ginger, cut large so I can remove the pieces (I draw the line at eating them)
-Chopped scallion whites
-Chopped shiitake mushrooms
Assemble it with cooked ramen noodles, boiled egg, corn, scallion greens, and furikake.
Look, Ms. Penso, I made your pecan tarts! I opted to not caramelize the pecans to cut down on the sugar. I realize the amount of sugar in the recipe is the same, but the dry-roasted pecans gave it the illusion of being less sweet. Very yummy, thank you for the recipe.
